Ingredients

6 boneless, skinless chicken breasts (5 to 6 ounces each)
1 package Good Seasons Italian Dressing mix**
1/4 cup water**
1 8 ounce package Neufchatel Cheese (or fat free cream cheese)
1 can 98% fat free cream of chicken soup
**If Good Seasons Italian Dressing mix is not available, use 1/3 cup fat free Italian dressing and 1/4 cup water.
Tips
I throw my chicken into the crockpot when it's still frozen. That's what I love most about cooking in it!
Directions
Place 6 boneless chicken breasts in crockpot, cover with one package Good Seasons Italian dressing mix and 1/4 cup water. **If Good Seasons Italian dressing mix is not available, you can use 1/3 cup fat free Italian dressing and 1/4 cup water.
Cook on low 6 to 8 hours. In a bowl, combine one 8 ounce package of Neufchatel cheese, softened, with one can fat free cream of chicken soup, mix until well combined and smooth. Remove chicken from crockpot, stir in cream cheese/soup mixture and stir until combined. Place chicken back in crockpot and cook for 15 more minutes.
Serve with Jasmine rice and mixed vegetables.
