Makes 12 cups of little breakfast frittatas. Makes 12 cups of little breakfast frittatas.

    1 tbs olive oil
    6 oz whole wheat bread
    1-2 leaves kale, chopped
    4 olives, chopped (kalamata preferred)
    6 large eggs
    1/4 tsp fresh rosemary, chopped
    salt and pepper to taste
    6 tbs parmesan cheese


Beat eggs in a spouted measuring cup - makes pouring and keeping things even a little easier

Reheat extras in the oven


oil a muffin tin (12 cups)

add bread, kale, and chopped olives evenly in the cups

mix eggs, a little water, rosemary, salt, and pepper - pour evenly over the cups

Top with parmesan cheese

Bake at 400 F for 15-20 minutes, until set and cooked through
