Ingredients

    2 c whole wheat flour (King Arthur)
    2 tsp baking powder
    1 1/2 tsp baking soda
    1/2 tsp fine sea salt
    1 tbsp honey
    2 lg eggs, light beaten
    1 3/4 c 1% milk
    2 tbsp butter, melted
    2 ripe bananas, mashed
    100% pure maple syrup for serving (not included in nutritional info)

Tips

I like to beat the eggs, then add the melted butter and honey to the eggs to help incorporate them. When I add them to the cold milk separately, it seems to make them thicker and and not mix in well.
My kids, who do not like the taste of whole wheat, love this recipe!


Directions

In a large bowl, mix the dry ingredients. In a small bowl, mix the wet ingredients except the bananas. Add the wet to the dry without over mixing. Fold in the bananas gently.
Using a 1/4 c measure, ladle the batter onto a preheated griddle and cook until golden on each side.

Serving Size: Makes 22 (or so) pancakes using 1/4 measure for batter
