    1 pint grape tomatoes
    1 head of garlic
    1 sliced portabella mushrooms
    1/2 a sweet onion
    whole wheat pasta (spaghetti or angel hair)
    2 boneless skinless chicken breasts
    4 tbsp EVOO
    some kind of Italian marinade


~Marinate Chicken breasts
~Cut head off garlic clove and place in middle of a square of foil, drizzle with olive oil and desired spices, wrap foil around it bake at 450 for 45 minutes.
~After 20 minutes, put grape tomatoes on a cookie sheet, drizzle with olive oil and spices. Roast at 450 for 25 minutes (or until split).
~ At this time, bake marinated chicken for 20 minutes, or until done.
~Also at this time, start pasta.
~While pasta is cooking, sauté portabella mushrooms and chopped onion in EVOO.
~When tomatoes are done, mix with Garlic and EVOO and mash together.
~mix in mushrooms and onion.
~Serve with Pasta and chicken.

* I also added fresh spinach which was surprisingly good.
