    1.5 cup green lentils
    2.5 cups water
    1/2 cups pecans
    1/4 cup cranberries, fresh or frozen, roughly chopped
    1 tbsp white wine vinegar
    2 tbsp chopped parsley


makes 8 1/2-cup servings

1. Combine lentils and water and bring to a boil. Reduce heat, cover and simmer for 30-45 min til the lentils are tender but not falling apart. Drain and place in a mixing bowl.
2. Preheat over to 350. Toast pecans on a baking sheet for 8-10min, til fragrant and just starting to brown. When cool enough to handle break them into small pieces.
3. Stir all ingredients together and serve warm or room temperature.
