Introduction

A slightly sweeter take on original hummus. A slightly sweeter take on original hummus.
Number of Servings: 8

Ingredients

    1 sweet potato (baked in skin)
    1 can chickpeas (I like mine peeled, but they don't have to be)
    1 tbsp tahini
    2 tbsp olive oil
    2 tbsp water
    2 cloves garlic
    juice of 1 lemon

Directions

After baking the sweet potato, combine sweet potatoes, chickpeas, garlic, and tahini in a food processor. Gradually add liquids to reach desired consistency.

Serving Size: makes 8 1/4-cup servings
