Roasted Cabbage Soup

2 lbs cabbage (shredded)
2 tbsp olive oil
1 tsp butter
1 onion, diced
1 cup celery, diced
1 cup carrot, diced
1 lb yukon gold potatoes, diced
4 cups of broth (beef, chicken, or veggie)
4 cups of water
salt and pepper to taste
Experiment with adding different ingredients to suit your taste. I used 3 cups of beef broth and 1 cup of chicken broth when I made this soup for the recipe, so that is what the nutritional values are based on. However, feel free to use whatever suits your tastes!
In the meantime, melt butter with the rest of the olive oil and begin cooking the onion over low heat until it begins to brown (20 minutes or so). Add celery and onion and raise temperature slightly. Cook until all vegetables become slightly tender. Add broth and potatoes and bring to a boil. Add cabbage and rest of water and lower temperature. Cook until all vegetables reach desired tenderness.
