Introduction
I love hot wings. So in search of a way to have them more often I came up with this recipe with a little help from Racheal Ray's base recipe. I love hot wings. Ingredients

2 pounds boneless skinless chicken breast cut into bite size pieces
1/2 cup fat free buttermilk
1/4 cup franks hot sauce
1 large onion, chopped
3 garlic cloves
1 large celery stalk
2 tbsp dried parsley
1/2 cup panko bread crumbs
2 egg whites

Tips
Makes a great snack or pair with coleslaw, macaroni salad and cornbread for a great meal.
Directions
Preheat oven to 400 degree.
In a medium bowl add chicken and buttermilk, marianate at least 2 hours or overnight.
Once marinated drain excess buttermilk and add chicken pieces to food processor, grind. Remove to a medium mixing bowl and add onion, garlic and celery. Process until minced. Add to chicken, then add dried parsley, and panko breadcrumbs, mx thoroughly.
Spray a mini muffin tin with cooking spray. With a mini cookie scoop, scoop chicken mixture into muffin tin, spray tops meatballs. Bake for 8 minutes, turn meatballs over; spray again, then bake another 8 minutes.
I use a 24 and 12 cup mini muffin tin.
One done add meatballs to a large mixing bowl and add hot sauce, toss meatballs to coat well.
Serving Size: Makes 6- 11 mini meatball servings.
