    6 large egg whites
    2 large eggs
    onions and peppers (as much as you'd like), or any other veggies for that matter
    8 oz of lean turkey sausage
    1/4 cup of fat free cheese
    1/4 cup of part-skim cheese (takes away the bitter funkiness of the fat free cheese)


Cook the turkey sausage in a skillet using Pam or other spray. Once finished, re-pam the skillet and add in diced onions and peppers. Cook until onion is translucent.

Preheat oven to 350 degrees.

Combine eggs, egg whites. Beat lightly.

Add both cheeses, cooked turkey, peppers and onions to egg mixture, and continue to mix.

Coat muffin pan with non-stick spray. Fill cups to 2/3 full.

Cook for 20-25 minutes.

Serving Size: Makes 10-12 egg cups
