Introduction

Combining New Year's Day traditional ingredients - turnip greens, black-eyed peas, rice - in a delicious hearty soup/ stew. Ingredients

    Fresh blackeyed peas, 12 oz package
    2 batches fresh turnip greens - about 10 cups, washed, drained, sliced/ chopped
    1.5 pounds lean ground turkey (or use ground pork)
    1 large onion, fresh , chopped
    2 cups (or more) Celery, fresh, chopped
    2 Tbsp. Bacon grease
    2 Tbsp. Olive Oil
    3 qt (cartons or fresh) chicken broth,
    3/4 cup brown rice, uncooked
    Seasonings to taste:
    Bay Leaves
    Black Pepper
    Poultry seasoning/ sage
    celery seed
    salt


Tips

Serve with piping hot Cornbread and butter.


Directions

Saute onions & celery lightly in large soup kettle using olive oil and bacon grease. Add turkey (or ground pork) and scramble until well broken. Add peas, turnip greens, rice, and broth.
Simmer for 3 or so hours until rice and peas are tender, stock is thickened, and flavors melded.


Serving Size: 10 or more generous servings probably 1.5 cups
