Introduction

Gluten-free, Vegan Pasta Primavera Gluten-free, Vegan Pasta Primavera
Number of Servings: 4

Ingredients

    1 box quinoa elbows, prepared as directed

    1 zucchini, sliced
    1 summer squash, sliced
    1 cup sliced carrots
    1/2 an onion, sliced
    1 cup cherry tomatoes, halved
    1 cup sliced mushrooms
    1/2 cup frozen peas
    1/2 cup frozen corn
    1 T garlic
    2 T olive oil
    1 T lemon juice
    kosher salt and fresh ground pepper to taste

    2 T basil chiffonade

Tips

If you want to add a cream sauce, I would do something with a cashew cream base with nutritional yeast, garlic, salt, and pepper.


Directions

Preheat oven to 350*.

Toss veggies in garlic, oil, lemon juice, salt, and pepper then spread out evenly on a 9x13 baking dish. Roast for 20-25 minutes until soft.

Toss with cooked noodles and top with basil chiffonade.

Serving Size: makes 4 2-cup servings
