    2 pounds boneless skinless chicken breasts
    1 C. Plain breadcrumbs
    1/2 C. Grated parmesan cheese
    4 t. Paprika
    4 t. Dried thyme
    2 t. Garlic salt
    2/3 C. Buttermilk lowfat
    olive oil cooking spray


You can use oregano or Basil instead of thyme if you wish.


Preheated oven to 450 degrees F. Cut up each chicken breasted into about 4 chicken fingers. Combine the next 5 ingredients in a shallow dish. Place buttermilk in separate shallow dish. Dip the chicken in the buttermilk and then dredged in breadcrumb mixture. Spray large cookie sheet with cooking spray. Place the chicken fingers on the pan. Spray each chicken finger with cooking spray. Bake for 10 minutes. Turn chicken fingers over and spray each one with cooking spray. Bake for 10 more minutes. Serve.
