    2 large Potatoes, sliced thinly
    1 leek, sliced thinly
    1 tomato, diced
    1 cup baby spinach, chopped
    6 eggs
    4 oz, shredded cheddar cheese
    1 tbs. minced garlic
    1 tsp Italian seasoning


Could be made with egg substitute or just whites as well!


Set oven to broil, Lo.

Spray a 12" cast iron or oven safe frying pan with butter flavored cooking spray. Add potatoes and leeks, frying until they become translucent and edges of potatoes begin to brown. Stir occasionally to prevent burning.

While they are cooking crack 6 eggs into a separate bowl, add Italian seasoning and mix with a fork, set aside.

Next add the garlic, tomatoes and spinach to the potaoes, cooking until they begin to wilt. Pour eggs over top and stir.

Turn heat down, cover, and allow to cook until eggs set.

When the bottom has set and the top is still slightly liquid sprinkle with cheese and put under the broiler to finish cooking the eggs and lightly brown the cheese.

Remove from oven, allow to rest for five minutes before cutting into six wedges.
