    1 package of 16 bean soup dry mix (throw out the seasoning package)
    3 large ribs of celery, diced
    1/2 sweet yellow onion, diced
    2T butter
    1 c. cubed ham or leftover hambone
    2-4 tsp of better than bullion, chicken OR 2 large boxes of chicken broth.


You could leave out the ham, and just use chicken stock instead. You could also sauté your celery and onion with cooking spray instead of butter.


Rinse dried beans off well and place in a large stock pot. Fill with water to about 2 inches over top. Bring to a rapid boil and boil for 5 minutes. Cut off heat and place lid on stock pot and let sit for 1 hour.

Over medium heat, melt butter in a skillet and saute' celery and onion until tender, add ham and heat.

Once hour soak is done, add celery, onion and ham to the beans and cover with about 8 cups of water (may need more) and bring to a boil. Add better than bullion to boiling water and stir well. Cover and reduce heat to low and allow to simmer for 2 1/2 -3 hours. Serve with warm, hearty bread. Great on a cold night.
