    2 large sweet potatoes, cubed
    1/2 cup fat free buttermilk
    1 tube Lightlife Gimme Lean Sausage Style
    1 chopped onion
    1/2 cup water
    2 cups frozen corn
    herbs & spices to taste


For the bottom layer, cook the onion in the oil until transparent and add the sausage. Break up into small pieces and brown. Add water and seasonings. Put in an 8X8 baking dish.
For the second layer, spread corn on the first layer.
For the third layer, boil sweet potato until tender, drain and mash with buttermilk. Spread this on top and bake at 350 for 30 minutes.
