    Saute onions, shallots, and garlic until tender. Add diced tomatoes, tomato sauce, tomato paste, and herbs. Simmer 15 minutes. Meanwhile brown meat and begin cooking noodles according to the box. Drain the meat when finished and add to the tomato sauce. Saute mushrooms and eggplant in the pan that is still slightly greased from the meat. Add to the sauce when tender. Drain and rinse the noodles when cooked al dente. Lightly grease an 8x10 pan. Add 1/3 tomato sauce to the bottom of the pan. Add three noodles. Top with layer of ricotta and mozzarella. Add another layer of meat, noodles, cheeses, and then meat again. Top with some Parmesan and mozzarella cheese. Cover with foil and bake in 375 degree oven for at least 20 minutes. Remove foil and continue cooking until cheese is bubbly.
