    - 2 tablespoons coconut oil
    - 4 cups cooked brown rice

    - 2 cups chopped apple (choose a sweet variety)
    - Cinnamon (optional)


1. Heat oil in a saucepan or skillet over medium-high heat; add cooked rice
and chopped apple and stir to blend well. Reduce heat to medium-low.
2. Continue to heat, stirring often until all ingredients are hot. If desired, add
cinnamon and stir well. Serve with or without unsweetened soy milk.
