Ingredients

    1 tbls. olive oil
    1.3 lb. cubed rump roast
    1/3 c diced onions
    1 clove garlic, minced
    salt and pepper, to taste
    14.5 oz can diced tomatoes
    1 10.5 oz. can beef broth, reconstituted
    1 c water
    1 c chopped carrots
    1 c chopped celery
    1 lb. diced red potatoes with skin



Directions

Brown beef cubes in olive oil with onion and garlic. Salt and pepper to taste. Add canned tomatoes, carrots. celery, reconstituted beef broth, and water. Simmer until vegetables and meat are tender. Add diced potatoes and simmer until potatoes are tender.

Serving Size: Makes 10 1 cup servings.
