This sounds sinful but is really pretty healthy! This sounds sinful but is really pretty healthy!
Number of Servings: 4


    4 Chicken Breasts no skin or bone
    1/4 cup of White Wine
    100 grams of Mozzarella Cheese, part skim milk
    2 cloves Garlic, minced
    1/2 cup diced onion
    1 tbsp Olive Oil
    at least 2 tbsp Basil (i like to use my homemade pesto)


Pound 4 chicken breasts until they are flattened.

Mix garlic, onion, basil, EEVO and any other spices you want together (I sometimes add sundried tomatoes). Spread mixture on inside of Chicken breasts.

Divide cheese equally and place on side with pesto mixture.

Roll chicken up so that cheese and pesto are inside and secure with a toothpick. I like to pour a little extra wine and basil or Parmesan cheese on top for effect.

Bake, covered to keep moist, at 400 degrees for 15 to 20 minutes until chicken is no longer pink. You can uncover to brown tops a little too.
