    Olive Oil, 2 tbsp
    Zucchini, 2 cup, sliced
    Butternut Squash, 2 cup, cubes
    Garlic, 1 clove
    Onions, raw, 1 medium
    Red Ripe Tomatoes, 2 cup, chopped or sliced
    Bell peppers, 1 medium
    Thyme, fresh, 1 tsp
    Basil, 5 leaves
    Tomato Paste, 0.5 cup
    Green Beans, 1 cup
    *Cheese (Mozza-Cheddar grated mix), 1 cup


1) Add one tbsp olive oil to a large skillet on high heat.
2) Add zucchini and squash and fry just until it gets a bit of brown on it. Transfer to a baking dish.
3) Lower heat to medium. Add 1 tbsp olive oil, garlic, onions, bell pepper, and tomatoes. Saute until softened.
4) Add tomato paste, salt, pepper, thyme and basil. Continue cooking until a thick sauce forms, about 5 min.
5) Add green beans and simmer for a minute.
6) Pour mixture over zucchini and squash.
7) Top with cheese.
8)Bake @ 350 for 15 min and then broil until the cheese turns a light golden brown and bubbles. Watch closely, it will burn quickly.

Serving Size: Serves 3 as a meal, 6 as a side dish
