Number of Servings: 6


    1 box sambar mix
    1 large potato, diced
    2 carrots, sliced very fine
    3 scallions or green onions, diced
    5 sprigs parsley, stems removed
    1 can diced tomatoes


1. Combine the sambar powder with 6 cups of water. Bring to a boil, add the diced potato and tomatoes, cover and simmer for 20 minutes or until potatoes start to get tender.

2. Add the remaining ingredients and a little bit of hot sauce if the soup isn't spicy enough. Simmer uncovered until the potatoes have finished cooking.

Serve hot, and add a dollop of low-fat sour cream for a creamier taste.
