Ingredients

    1/2 Cup RED Lentils
    1/2 Stick of celery, chopped
    1 small carrot, chopped
    2 cups of water
    1-2 teaspoons of Curry powder
    2 Tablespoons Plain flour
    1 egg white, lightly beaten
    1 1/4 cups of breadcrumbs
    1 tablespoon polyunsaturated vegetable oil
    Ground pepper to taste

Tips

Complete steps one and two the evening before making the burgers to save time.


Directions

1. Combine lentils, celery, carrot, water and curry powder in a pan, bring to a boil.
2. Simmer covered until mixture thickens, and then cool.
3. Stir in one cup of breadcrumbs and shape mixture into 4 burgers
4. Toss in flour, dip in egg white then cover with remaining breadcrumbs.
5. Heat oil in non-stick pan, add burgers and cook until well browned on both sides, add pepper to taste.

Serving Size: Makes 4 Burgers
