    1 large head of cauliflower
    1 container of prewashed and cut mushrooms (portabellas or button) (approx 2 cups)
    1tbls light earth balance spread
    1/2 cup of tempeh diced (crouton size)
    1 tbls olive oil
    2 tbls chives
    3 cups vegetable broth
    2 tbls flour
    4 oz white wine
    1.5 tbls dried sage
    1 small onion
    3 cloves garlic
    1/2 tsp black pepper
    salt to taste


Rough chop cauliflower and put in steamer. saute onion & garlic in olive oil, add mushrooms and cook till soft. Add wine. Let cook down.. Add fennel, sage and pepper and mix well. add vegetable broth, taste for flavor. If no more herbs needed, add flour in bit by bit whisking to keep lumps from forming under higher heat. Once gravy has started to thicken, add tempeh and let simmer for 10 minutes. When cauliflower is fully steamed, put in food processor and blend till perfectly smooth. Add chives pulse a few more times. Salt to your liking. Pour tempeh, mushroom gravy over mashed cauliflower and serve.
