    One head Cauliflower
    one egg
    1/3 cup Neufchatel cheese
    1 tsp oregano


Cook toppings before placing on pizza.


rice cauliflower in a blender. Microwave for 8 minutes. Let cool. Squeeze water out with dishtowel. (you'll get about a cup) Mix in cheese, egg and oregano.
Spread out on parchment paper on cookie sheet to about 1/3 in. Raise outer edges a bit.
Bake i 400 degree oven for 30 minutes.
Top as desired. Place under broiler til cheese is melted.

Serving Size: makes 8 servings
