    1 cup Wheat Bran
    1/4 cup flax
    1/4 cup wheat germ
    1/3 cup oil/applesauce (half of each)
    1 large egg
    2/3 cup brown sugar
    1 cup skim milk
    1/2 teaspoon vanilla extract
    1/2 cup all purpose flour
    1/2 cup wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp salt

    1 cup blueberries (fresh or frozen)


1. Preheat oven to 375 degrees. Spray non-stick spray on muffin cups.

2. Mix together wheat bran, flax, and wheat germ with the skim milk. Let sit for 10 minutes.

3. Beat together oil, egg, sugar, and vanilla and add to the milk/bran mixture. Sift together the flour, baking soda, baking powder, and salt. Stir flour mixture into milk mixture, until just blended. Fold in blueberries and spoon batter into muffin tins.

4. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of the muffin comes out clean.

  • Very good! I used more applesauce than oil and the muffins turned out very moist. Not real sweet but just enough! I'm going to try this recipe again, maybe with some different fruits added! - 3/14/08
