Introduction

Ingredients

    1/2 c Cotage Cheese, 1% Milkfat
    1/2 c Dole Pineapple tidbits, 100% pineapple juice
    1/4 c Dried, unsweetened coconut flakes
    1/4 c Bob's Red Mill Whole Wheat Pastry Flour
    2 tsp Sugar(or sugar substitute)
    1 Large Egg
    1 tsp Pure Vanilla Extract

Directions

Spray pan/griddle with Pam or use small amount of butter and preheat on low.

Whisk all ingredients together in a bowl.

Cook on low heat, about 3 min per side for best results.

Can serve dusted with powdered sugar if desired.
