    250g cooked sweet potato
    150g cooked carrots
    60g plain flour
    25g dried breadcrumbs
    1 egg beaten
    pinch of nutmeg
    1tbsp olive oil
    2 cloves garlic
    400g canned tomatoes
    10 cherry tomatoes
    1 tsp sugar
    1 tbsp basil
    2 tbsp parmesan


-Put the sweet potato, carrot, egg, salt and nutmeg into a bowl and mix. Add the flour and breadcrumbs. Stand for at least 10minutes. Bring a pan of salted water to the boil and drop tsp of the mixture into the water and simmer til they float. Drain and set aside.

-For the sauce, heat a pan with the olive oil and fry the garlic for a few minutes. Add the chopped tomatoes and simmer for a few minutes. Add the sugar and cherry tomatoes and simmer for a further 3 minutes. Season and finish with chopped basil. Add the gnocchi (the sweet potato mix) and sprinkle with grated Parmesan.
