Number of Servings: 6


    Cooking spray
    3 garlic cloves
    Kosher salt and fresh ground pepper, to taste
    1 bunch kale, stemmed and roughly chopped
    3 large sweet potatoes (about 2.5 pounds), peeled and slice about 1/8" thick
    2 cups half-and-half (while it doesn't thicken as well I prefer the Land O' Lakes Fat Free Half & Half)
    Cinnamon & nutmeg (optional)
    1/2 cup crumbled goat cheese


Cheeses can be swapped out


Preheat oven to 400 and spray inside of 8x8" baking dish w/ cooking spray.

Combine garlic, kale, potatoes and half-and-half in a pot and stir. Season with salt and pepper (and cinnamon/nutmeg if desired). Bring to a boil over medium head while stirring. After 8-10 mins the potatoes will be tender and their starch will have thickened the mixture.

Transfer to prepared dish, smooth top and top with goat cheese. Bake until deep golden brown, about 20-30 mins. Let cool before serving.
