    2 cups escarole (or spinach) chopped
    2 cloves garlic, minced
    1 cup onions, chopped
    2 cups spinach, chopped
    2 small zucchini, cubed
    1 medium red pepper, chopped (or 2 small cherry peppers and 1/2 green Italian pepper)
    6 cups vegetable broth
    28 oz fire-roasted canned diced tomatoes
    1/2 tsp crushed red pepper flakes
    2 tsp fresh thyme
    1 tsp fresh oregano
    salt cup if desired
    1/4 tsp black pepper
    1/4 fresh parsley, chopped
    1/4 cup fresh basil, chopped


For a little more protein add a can of chick peas or other beans.
For more flavor add the a parmesean cheese rind or sprinkle some cheese on top.


Put all the vegetables and herbs and spices except the parsley and basil in a soup pot and bring to a boil. Cook for 10 minutes, add the parsley and basil and serve.
