Number of Servings: 8


    2 Cups Minute Premium Rice (uncooked)
    1 14.5 oz. can 99% Fat Free Chicken Broth
    1/2 Medium yellow onion, chopped
    1 tsp. dried oregano
    1/2 tsp. dried ground cumin
    Juice of 1/2 medium lime
    1 14.5 oz. can diced tomatoes with green chilis
    3 green onions, sliced thinly
    1/2 Cup fresh cilantro leaves


In medium saucepan, bring broth, yellow onion, oregano, cumin and lime juice to a boil. Simmer for 5 minutes. Remove from heat and add rice and tomatoes; stir. Cover and let stand 5 minutes or until liquid is absorbed. Add green onion and cilantro, stir well, and serve. Makes 8 servings about 3/4 cup each.
