    1 16 oz can Cannellini Beans (white kidney beans), drained and rinsed
    2 carrots, peeled and chopped
    2 stalks celery, chopped
    1 med onion, chopped
    3 cloves garlic, minced
    1 red bell pepper, chopped
    8 button mushrooms, chopped
    1 tbsp Olive Oil
    1 jar Marinara sauce (24 oz)
    2 tsp dried oregano
    pinch red pepper flakes
    salt to taste
    serve over rice or pasta (optional--not included in nutrition count)


heat oil in large deep skillet. Chop veggies. Add onion, carrots and celery to hot oil. Saute about 5 minutes until veggies are starting to get tender. Add garlic, bell pepper and mushroom and cook about 5 minutes longer. Stir in beans, marinara sauce, oregano and red pepper flakes. Reduce heat and simmer for about 15 minutes until all veggies are fork tender and sauce is heated through. Serve alone or over rice or your favorite pasta.
