    Cottage Cheese


Enjoy...this is one of my favorite breads and make it often. Good with dinner, sandwiches, toast...I think it does it all.


Put the yeast in warm water with sugar to proof. Put room temperature cottage cheese and eggs in mixer bowl with dough hook, mix. After the yeast has bloomed put it into the mixing bowl and add other ingredients. Mix for approximately 8 minutes. Put into a bowl that has been sprayed with cooking spray, cover and put in a warm place to rise until it has doubled it's size. Take out onto a floured surface, kneed a few times to get the bubbles out, separate into 2 pieces and work into loaves placing into bread pans that have been sprayed with cooking spray. Let rise 30 minutes and bake at 350 degrees for 30 minutes.

Serving Size: Makes 2 16 ounce loaves
