    1 1/2 cups whole wheat flour
    1 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1 1/2 tsp baking soda
    1/4 tsp salt

    1/2 cup unsweetened milk alternative of choice
    (I used Almond milk- soy, coconut or rice milk will do)
    1/4 cup canola oil
    1 tsp vanilla extract
    2 cups ripe mashed bananas
    1/2 cup nuts (I used chopped walnuts) optional


Preheat oven to 350
Spray a bread pan with cooking spray and set aside.
In a small bowl sift together flour, cinnamon, nutmeg, baking soda and salt. Set Aside.
In a large mixing bowl combine the milk alternative, oil, vanilla and bananas until well mixed.
Stir in the dry ingredients BY HAND, being careful to not over mix. A few lumps are okay.
Gently fold in the nuts
Spread the batter into pan and bake 35-45 minutes or until the top is resilient to the touch
Allow bread to cool in pan for @ 10-15 minutes then remove and place on wire rack to cool completely.

Serving Size: 1 piece (1 loaf = 12 servings)
