Muffins made with yogurt, whole wheat flour, wheat germ and vegetable oil. Muffins made with yogurt, whole wheat flour, wheat germ and vegetable oil.
Number of Servings: 36


    2 cups whole wheat flour
    1/2 cup white flour
    1/2 cup wheat germ
    1/2 cup white sugar
    1 tbs cinnamon
    1 tsp nutmeg
    1 tbs baking powder
    1 tsp baking soda

    2 eggs
    1 six oz container of lite vanilla yogurt
    1 15oz can of pumpkin puree
    3/4 cup canola oil
    1/2 cup mini chocolate chips


Preheat oven to 350 degrees. Combine dry ingredients in one bowl. Combine wet ingredients in a second bowl. Stir dry ingredients into wet, then add chocolate chips. Scoop into either mini or regular greased muffin tins. Bake for approximately 15 minutes or until a toothpick comes out of the center clear.

Serving Size: makes approximately 36 regular muffins
