    1 box no boil lasagna noodles
    1 jar pasta sauce
    1 can diced tomatoes
    10 oz ground turkey
    8 oz sliced mushrooms
    2 eggs
    1 container part skim ricotta
    1/2 c parmesan cheese
    4 c mozzarella
    10 oz baby spinach


Preheat oven to 375 F

In a large skillet, sautee the mushrooms until soft. Add the ground turkey and cook thoroughly. Add the sauce and tomatoes and bring to a boil. Simmer for 10 minutes.

In a separate container, whisk the eggs. Stir in the parmesan, ricotta, and half the mozzarella.

Grease a 9x13 dish. Scoop in two cups of the tomato mixture (enough to cover the bottom). Layer 6 noodles, overlapping if necessary. Spread half the cheese mixture on top of the noodles. Sprinkle with half the spinach. Scoop 1.5 cup of the tomato mixture on top of spinach and repeat noodles, cheese and spinach. Finish by covering the spinach with the remainder of the tomato mixture.

Cover with foil and bake for 45 mins. Remove foil, sprinkle remaining mozzarella over the top and bake, uncovered, for 10 minutes. Let sit 20 minutes before cutting.
