    1 pound elbow macaroni
    3 tablespoons olive oil
    1 medium onion, chopped
    2 clove garlic, chopped fine
    One 10 ounce bag frozen bagged spinach
    generous pinch of salt
    3 tablespoons flour
    2 cups milk
    freshly ground pepper
    1/8 teaspoon freshly grated nutmeg
    1 lb box Jalapeno Velveeta
    1 - 12 ounce jar olives, choppeds
    4 tablespoon sun-dried tomatoes, chopped
    3 cups mushrooms, chopped


Saute onion, garlic, sun-dried tomatoes and mushrooms in olive oil. Add frozen spinach and simmer. Add salt, pepper, nutmeg and olives. melt Velveeta in 2c of milk while cooking pasta. combine pasta with spinach mushroom mixture and add cheese. put in oven 350 degrees for 30 min.
