A nice warm non-spicy chicken breast with vegetable soup. A nice warm non-spicy chicken breast with vegetable soup.
Number of Servings: 3


    2 boneless chicken breast strips cut into squares
    1/2 cup of all natural petite tomatoes in juice
    juice of la costena chpotle peppers
    4 tbs olive oil

    1/4 cup frozen broccoli
    1/4 cup frozen cauliflower
    1/4 cup frozen sliced carrots
    2 cups of water
    Salt to taste.


If you don't use the chipotle peppers it won't be spicy.


In a medium pot cook chicken breast pieces in olive oil until completely browned.

Add 1/2 cup petite tomatotes and juice of chipotle.

Let simmer for about a minute then add frozen broccoli, cauliflower, carrots, and water.

Bring to a boil and continue to boil for about 5 minutes until the frozen vegetables are soft.

Serve in a bowl.

Serving Size: 3 large soup bowls
