    1 tbs olive oil
    1 small onion, chopped
    1/4 cup diced carrots
    1 can diced tomatoes
    8 cups low sodium chicken broth
    1 cup lentils
    1 cup frozen kale


1. Saute onion and carrots in olive oil until soft.
2. Add tomatoes, broth and lentils. Bring to a boil, then lower heat and simmer until lentils are done, about 20 minutes.
3. Add kale and cook until heated through.

Serving Size: makes 4 2-cup servings
