Ingredients

    8 oz linguini
    1/4 cup tomato puree
    2 tbsp lite Rice vinegar
    2 tbsp brown sugar
    1/4 tsp cayenne pepper
    1 cup sliced mushrooms
    6 oz shredded carrots
    5 heaping tsp crushed garlic
    1 tbsp ground ginger
    6 oz broccoli slaw
    4 tbsp lite soy sauce

Tips

Can add perdue chicken shortcuts for chicken lomein but remember to adjust nutritional counts.


Directions

cook noodles according to package directions. Meanwhile, mix tomato puree, vinegar, sugar, and pepper together. Strain pasta, return to pot, and mix with tomato mixture.
Cook mushroom for about 2 minutes. Add carrot, ginger, and garlic, cook 1 minute longer. Add broccoli slaw and cook until slaw looks wilted. Mix with noodle mixture.
Add soy sauce to taste.
