Number of Servings: 6

Ingredients

    1 large onion, halved and sliced
    3 boneless, skinless chicken breasts
    1/2 tsp salt
    1/4 tsp pepper
    2 T butter, melted
    1/4 c honey
    1/4 c Dijon mustard
    1 T curry powder
    2 lrg red bell peppers, cut into bite-size strips (~1 cup)

Tips

Can use frozen chicken breasts, but you'll need to increase the cooking time by 1/2-1 hour.


Directions

Place onion in the bottom of a 3.5 qrt slowcooker. Season chicken with salt and pepper and place on top of the onions. Combine butter, honey, mustard and curry powder. Pour over chicken. Place peppers on top. Cook on low for 5.5 - 6 hours or high for 2.5 - 3 hours. Serve over warm rice.
