    1 lb. lean ground beef
    2 large green peppers, chopped
    2 cloves garlic, minced
    3 fresh roma tomatoes, seeded and chopped, or one 14.5 oz. can of diced tomatoes
    1 small onion, chopped
    1 celery stalk, chopped
    48 oz. beef stock or broth
    2 oz. tomato paste
    1 tsp dried thyme
    1/2 tsp black pepper
    2 Tbsp soy sauce
    1 Tbsp brown sugar
    1 cup white or basmati rice
    salt and pepper to taste


Brown the beef with onion and celery in a large stock pot over medium heat. Drain well. Add peppers, garlic, and tomatoes, and return to heat for five minutes to let flavors develop. Add stock, tomato paste, thyme, pepper, soy sauce, and brown sugar and bring soup to a simmer. When soup comes to a simmer, add the rice, cover, and cook until rice is done (about 20 minutes). Adjust seasonings as needed before serving.
