Ingredients

    8 La Tortilla Factory Smart & Delicious Tortillas
    1 package, Jennie-O Hot Turkey Breakfast Sausage
    1 bag, frozen peppers & onions
    1 can, rotal tomatoes and chilies (diced)
    1 can, low sodium black beans
    1 carton, egg beaters (7 servings)
    4 large eggs
    1 can, Rico's white queso blanco

Tips

Queso account for 88 calories per serving. To make this meal lighter, eliminate queso or use half the amount (about 1 oz per burrito instead of nearly 2)


Directions

Cook sausage over skillet, set aside.

Cook peppers and onions, then add tomatoes and black beans, drain and return to pan.

Beat together egg beaters and eggs, pour over peppers and onions, tomatoes, and black beans. Scramble halfway, add meat back in. Finish scrambling.

Put 8-10 oz in each tortilla. Wrap and top with queso.
