IntroductionI added a lot more veggies to regular pasticio recipe. This is an experiment. I love pasticio, so tried chucking more vegs in with it. Was rather shocked to see the calories for the 8 servings I originally estimated it would do!

macaroni 500 g packet
400 g mince
350 g carrots, grated
4 medium onions, chopped
6 cloves garlic
2 peppers chopped
2 tbsp flax seed ground
650 g tinned tomatoes, slightly liquidised
2 tbsp tomato ketchup
4 tbsp worcester sauce
2 cups low fat milk
2 tbsp flaxseed, ground
1 cup cheddar cheese, grated
I can't advise re temperature and cooking time as I cook on my woodburning stove and have to adjust myself to its moods!
I haven't given instructions for seasoning - you'll have your favorites anyway. Sauce wants some nutmeg or cinnamon.
Fry mince, together with onions and garlic till softened. add other fresh vegs till softened. Add tomatoes,herbs and other seasoning, 2 tbsp ground flaxseed to thicken.
Whip up another 2 tbsp flax seed with water till frothy. Add eggs, milk, nutmeg or something, about 12 grated cheese.
Now put it together!
Just over 1/2 macaroni on bottom of a baking dish.
Meat and veg on top. rest of macaroni over that.
Pour sauce over the top and sprinkle rest of grated cheese on top of that.
Put in oven and bake till top is browned and sauce has set. You should then be able to cut it into portions
