Introduction

I saw this recipe in Woman's World, their recipe called for 4 cups of vegetables in total, but I tweaked this recipe to get much more veggies into the soup, and jazzed it up with extra spices, and tried to use "no salt added" wherever possible. Ingredients

    3 cups home made turkey stock, no salt added
    2 - 32oz containers of no salt added ckicken stock
    6 tbsp minced garlic
    1/3 cup minced onion (dry)
    1 tsp thyme
    2 large bay leaves whole
    1 tbsp chili flakes (dry)
    1 tsp ancho chili powder
    1 tbsp Mrs. Dash onion & herb seasoning
    1 tbsp McCormicks no salt added garlic and herb seasoning
    16 tbsp Worchestershire sauce
    8 tbsp Kikkoman Ponzu soy sauce
    1 tbsp PC Black Label Umami paste
    16 oz fresh mushrooms
    4 cups bok choy chopped
    2 - 28oz cans no salt added diced tomatoes
    1 cup celery
    1 cup carrots
    1 - 19oz can artichoke quarters, drained and rinsed to remove salt
    1 - 10oz box okra (frozen)
    1 cup uncooked alphabet pasta
    1-1/2 lbs cooked turkey finely chopped

Tips

Other types of carbs can be added instead of pasta, such as quinoa, beans, brown rice or whole wheat orzo.
If you're on a low sodium diet be careful of using canned soup stock as this has a very high sodium level.


Directions

In large stock pot over medium heat, add oil, onion and garlic, saute ing until translucent. Add turkey broth, chicken stock and spices, and bring to a boil. If you want to add more seasonings, now is the time to do it.
Add all vegetables, bring back to a boil again, and then lower heat to a simmer for remaining time (2-1/2 to 3 hours)
