boiled beets, carrots and sweet potato w/pickles and onions boiled beets, carrots and sweet potato w/pickles and onions

Ingredients

    3 medium beets, 3 carrots, 1 sweet potato, 2 israeli pickles (300 mg sodium each), 2/3 medium white onion, 1 1/2 tbs sunflower oil

Directions

boil beets, carrots & sweet potato for approx 40 minutes, with skin on. let cool, remove skins (optional), dice all veggies. then dice onions and pickles. toss with sunflower oil and black pepper.

Serving Size: makes 8 1-cup servings
