Ingredients

1 medium onion, chopped
1/2 green bell pepper, chopped
1 red pepper, chopped
2 ribs celery, chopped
1 jalapeno, seeded and diced
3 cloves garlic, grated
1.5 Tbs EVOO
1 can Hunt's basil, garlic, and oregano diced tomatoes,
no salt added
1 cup pinto beans, no salt added
1 cup stock (chicken, turkey, or vegetable)
2 Tbs Whole wheat flour
4 servings of instant brown rice, cooked
Directions
In a dutch oven over medium heat, saute onion, peppers, celery, and garlic until veggies start to carmelize. Add tomatoes, stock, and pinto beans. Season with cayenne pepper to taste. Sprinkle in flour and stir til slightly thickened. Allow to simmer on low for 10-15 minutes, stirring occasionally. Serve over brown rice.
