Introduction

Ingredients

1/2 medium chopped onion
1 tablespoon melted butter
1/4 cup flour
2 cups fat free milk
2 cups chicken stock
1/2 lb fresh broccoli, chopped fine (about 2 cups)
1 cup carrot, julienned
1/4 teaspoon nutmeg
8 ounces grated sharp cheddar cheese
salt and pepper (to taste)
Tips
I used a blender to finely chop the broccoli before I added it to the soup and didn't need to blend after cooking.
Serve with salad or bread (but make sure you add the nutritional facts for your additions).
Directions
STEP 1: Sauté onion in non stick cooking spray. Set aside.
STEP 2: Cook melted butter and flour using a whisk over medium heat for 3-5 minutes. Stir constantly and add the milk.
STEP 3: Add the chicken stock. Simmer for 20 minutes.
STEP 4: Add the broccoli, carrots and onions. Cook over low heat 20-25 minutes.
STEP 5: Add salt and pepper. Transfer contents to a blender and pulse until desired consistency (if at all). Return to heat and add cheese. Stir in nutmeg.
