Ingredients

    1 large can crushed tomato
    1 can diced tomatoes
    1 small can tomato paste
    one vidalia onion
    fresh parsley
    fresh basil
    garlic
    sugar
    salt
    pepper
    red wine
    balsamic vinegar

Directions

Heat 1 TBSP olive oil over medium heat in bottom of large saucepan or dutch oven. Chop 1 onion and add to pan. Cook for 3-5 minutes until tender and fragrant. Add fresh chopped or powdered garlic, 4 oz red wine, 4 tbsp balsamic vinegar, and 2 tbsp sugar. Cook until reduced by about half. Add crushed and diced tomatoes and tomato paste. Add chopped basil and parsley and any other fresh herbs, and black pepper. Simmer over low heat for 60-90 minutes, stirring occasionally. Add salt towards the end to taste. Remove from heat, cool and eat with pasta or any protein, or regfrigerate/freeze for later use.
