Number of Servings: 12


    12 Eggs, scrambled in a blender/bullet for 10 seconds
    10 leaves of Spinach, finely diced
    1 lb/ 16 oz of lean ground Turkey, browned and seasoned to taste (pepper or Montreal Seasoning)
    2 tea Sea Salt


Optional can add 1 tablespoon of diced garlic to mixture if desired.


Preheat oven to 350 F

Grease 12 count muffin tin with oil, butter, fat, etc, especially coating the bottom.

Combine Diced Spinach and browned ground Turkey in a bowl. Add enough wet scrambled egg mixture to coat everything. Add sea salt and any other seasonings to this mixture.

Distribute spinach, turkey and seasoning to the bottom of the muffin tin. Poor the rest of the wet scrambled egg over the tins until full.

Bake in oven for 20 minutes, checking every 5 for air bubbles in eggs.

Serving Size: makes 12 muffins
