    1 cup dry, uncooked, organic quinoa
    2 cups no-fat milk
    3 tbsp brown sugar
    1/2 tsp cinnamon
    1 cup blueberries

    Extra milk, sugar, cinnamon, blueberries or agave nectar, if required


Rinse quinoa
Bring the milk to the boil in a pot
Add the quinoa and bring to the boil, covered
Reduce the heat to low and allow to simmer, covered, until about 3/4 of the milk has been absorbed (around 15 minutes)
Add the brown sugar and cinnamon
Allow to simmer, covered, until the liquid is mostly absorbed (around 8 minutes)
Add the blueberries and cook for an additional 30 seconds
Stir, remove from heat but allow to sit, covered, for an additional 5 minutes or so. I find that this allows the quinoa to fully cook and become nice and soft and fluffy.
Serve with additional milk, blueberries. agave or cinnamon if required
